Make this incredibly moist and flavorful Crockpot French Onion Meatloaf. Slow-cooked with the rich taste of French onion soup and topped with gooey Swiss cheese, this recipe is the definition of easy comfort food for busy weeknights.

  • 2 lbs ground beef (80/20 recommended)
  • 1 (10.5 ounce) can condensed French onion soup, undiluted
  • 1 large egg
  • 1/2 cup breadcrumbs (plain or Panko)
  • 1/4 cup finely chopped onion
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup beef broth
  • 1 tablespoon cornstarch
  • 8 slices Swiss cheese

Instructions

  1. In a large bowl, gently combine the ground beef, half of the French onion soup (1/2 cup), egg, breadcrumbs, chopped onion, Worcestershire sauce, thyme, pepper, and salt. Do not overmix.
  2. Shape the mixture into a loaf shape and place it in the bottom of a 6-quart or larger slow cooker.
  3. In a small bowl, whisk together the remaining French onion soup and the beef broth. Pour this mixture over and around the meatloaf.
  4. Cover the slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the meatloaf is cooked through.
  5. Carefully remove the lid. Drain off most of the excess liquid from the slow cooker, leaving about 1/2 cup of liquid in the bottom for the sauce.
  6. In a small bowl, mix the cornstarch with 1 tablespoon of cold water to create a slurry. Stir this slurry into the remaining liquid in the slow cooker.
  7. Increase the slow cooker setting to HIGH (if it was on LOW) and cook for 10 to 15 minutes, stirring occasionally, until the sauce thickens slightly.
  8. Arrange the Swiss cheese slices evenly over the top of the meatloaf. Cover and cook on HIGH for 5 to 10 minutes, or until the cheese is fully melted and gooey.
  9. Slice and serve immediately with the onion gravy spooned over the top.

Notes

  • For an extra savory flavor, substitute one packet of dry onion soup mix for the 1/4 cup chopped onion.
  • Serve this hearty beef crockpot meal with creamy mashed potatoes or steamed green beans for a complete family dinner.
  • If you prefer a firmer glaze, you can skip the slow cooker cheese step and top the meatloaf with a mixture of ketchup and brown sugar during the last 30 minutes of cooking instead.
