12 sheets rice paper wrappers
1 tablespoon neutral oil (for brushing)
Filling (Choose one option below)
For Dipping Sauce: 2 tablespoons soy sauce or tamari
For Dipping Sauce: 1 tablespoon rice vinegar
For Dipping Sauce: 1 teaspoon sesame oil
For Dipping Sauce: 1 teaspoon maple syrup or sugar
Instructions
Prepare your filling. If using the vegan tofu filling, press the tofu well to remove excess water, then crumble it into a bowl. Mix the crumbled tofu with soy sauce, ginger, garlic powder, and sesame oil. If using the chicken filling, cook the ground chicken until browned, drain fat, and mix with the same seasonings.
Prepare a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 to 15 seconds until it is pliable but not overly soft. Lay the softened wrapper flat on a clean, damp surface.
Place about 1 to 1.5 tablespoons of your chosen filling near the bottom edge of the wrapper.
Fold the bottom edge up over the filling. Fold in the left and right sides, similar to folding a burrito. Roll the wrapper tightly upwards until you have a sealed dumpling shape. Repeat with the remaining wrappers and filling.
Preheat your air fryer to 375 degrees Fahrenheit (190 degrees Celsius).
Lightly brush the outside of each rice paper dumpling with neutral oil. This helps achieve maximum crispiness.
Place the dumplings in a single layer in the air fryer basket, ensuring they do not touch. Work in batches if necessary.
Air fry for 8 to 10 minutes, flipping halfway through, until the wrappers are golden brown and very crispy.
While the dumplings cook, whisk together all dipping sauce ingredients in a small bowl.
Serve the hot, crispy rice paper dumplings immediately with the dipping sauce.
Notes
For an extra savory flavor, you can add finely chopped cooked mushrooms or shredded cabbage to your filling mixture.
If you do not have an air fryer, you can pan fry these dumplings in 1/4 inch of hot oil for 2-3 minutes per side until golden and crisp.
