Make this easy, one-pot creamy beef pasta for a satisfying weeknight dinner. This recipe uses ground beef and Parmesan cheese to create a rich, velvety sauce that cooks quickly.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 8 ounces dry pasta (like penne or rotini)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until soft, about 4 minutes.
  3. Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the beef broth and the can of diced tomatoes (with their liquid). Bring the mixture to a boil.
  5. Add the dry pasta to the boiling liquid. Stir well to prevent sticking.
  6. Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally during cooking.
  7. Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
  8. Taste and adjust salt and pepper if needed. Serve immediately, garnished with fresh parsley.

Notes

  • For a richer flavor, substitute half of the beef broth with dry red wine and let it cook down before adding the rest of the broth.
  • Use fettuccine or bow tie pasta for a different texture, adjusting the cooking time slightly if needed.
  • If you want a thicker sauce, uncover the pot for the last 5 minutes of simmering.
