A quick and easy chicken salad recipe featuring the sweet-tart flavors of cranberries and apples, perfect for meal prep.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup dried cranberries
  • 1/2 cup diced apple
  • 1/4 cup chopped celery
  • 1/4 cup chopped pecans or walnuts
  • 1/3 cup mayonnaise
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine the cooked chicken, dried cranberries, diced apple, chopped celery, and chopped nuts.
  2. In a small bowl, whisk together the mayonnaise, chopped dill, and lemon juice.
  3. Pour the dressing over the chicken mixture and stir gently to combine.
