A quick, single-serve brownie made with cottage cheese, perfect for a high-protein, low-sugar treat.

Ingredients

Scale
  • 1/4 cup cottage cheese
  • 1 large egg
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons almond flour
  • 1 tablespoon sweetener (e.g., erythritol, stevia)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 tablespoon sugar-free chocolate chips

Instructions

  1. In a microwave-safe mug or small bowl, combine cottage cheese and egg. Mix until smooth.
  2. Add cocoa powder, almond flour, sweetener, baking powder, vanilla extract, and salt. Stir until well combined and no lumps remain.
  3. If using, fold in sugar-free chocolate chips.
  4. Microwave on high for 90 seconds to 2 minutes, or until the brownie is set but still slightly moist in the center. Cooking time may vary depending on your microwave.
  5. Let cool for a minute before enjoying.

Notes

  • For a richer flavor, you can add a tiny bit of instant coffee granules to the batter.
  • Ensure your cottage cheese is well-drained if it has a lot of liquid.
  • This recipe is naturally gluten-free.
