  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine the rinsed and drained chickpeas, cottage cheese, chopped cucumber, chopped cherry tomatoes, chopped red onion, and chopped fresh parsley.
  2. In a small bowl, whisk together the fresh lemon juice, olive oil, and dried oregano.
  3. Pour the dressing over the chickpea and cottage cheese mixture.
  4. Season with salt and black pepper to your preference.
  5. Stir gently to combine all ingredients.
  6. Serve immediately or chill for later.
