Welcome! You can make ultra-rich, fudgy, and chewy homemade Cosmic Brownies that taste better than the boxed version. This easy recipe delivers the classic chocolate flavor topped with smooth ganache and colorful candy chips.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips (for batter)
  • 1 cup chocolate chips (for topping)
  • 1/4 cup heavy cream
  • 1 cup candy-coated chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, whisk together the melted butter and granulated sugar until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in the 1 cup of chocolate chips for the batter.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter. This keeps your brownies fudgy.
  8. Let the brownies cool completely in the pan on a wire rack.
  9. Prepare the ganache frosting: Place the remaining 1 cup of chocolate chips in a heatproof bowl. Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate chips. Let it sit for 5 minutes, then whisk until smooth and glossy.
  10. Pour the warm ganache over the cooled brownies and spread it evenly to cover the top.
  11. Immediately sprinkle the candy-coated chocolate chips over the wet frosting.
  12. Let the frosting set completely, about 1 hour, before lifting the brownies out using the parchment paper overhang and cutting them into squares.

Notes

  • For the fudgiest texture, slightly underbake the brownies; they will continue to set as they cool.
  • You can use a mix of different colored candy chips for the best cosmic look.
  • If you want thicker brownies, use an 8×8 inch pan, but reduce the baking time slightly.
