  • 4 large eggs, separated

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Place the cottage cheese and egg yolks into a food processor or blender. Blend until the mixture is completely smooth, scraping down the sides as needed.
  3. In a separate, clean, dry bowl, beat the egg whites with the cream of tartar (if using) until stiff peaks form. You want the whites to hold their shape firmly.
  4. Gently fold one-third of the stiff egg whites into the cottage cheese mixture to lighten it.
  5. Carefully fold in the remaining egg whites in two additions, working gently to keep as much air in the mixture as possible. Do not overmix; stop when no white streaks remain.
  6. Spoon six equal mounds of the batter onto the prepared baking sheet. Gently shape them into round, flat bread shapes.
  7. Bake for 25 to 30 minutes, or until the tops are lightly golden brown and the bread feels set.
  8. Remove from the oven and let cool completely on the baking sheet before handling. These are best used immediately as a sandwich bread replacement.
