  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/4 cup unsweetened cocoa powder, plus 3 tablespoons extra for the sauce
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
  2. In a large bowl, whisk together the flour, 1 1/2 cups sugar, 1/4 cup cocoa powder, baking soda, and salt.
  3. Add the milk, oil, vanilla extract, and eggs to the dry ingredients. Mix with a whisk until just combined. Do not overmix; a few small lumps are fine.
  4. Pour the batter evenly into your prepared baking pan.
  5. In a separate small bowl, whisk together the remaining 3 tablespoons of cocoa powder and 1/2 cup of sugar. Sprinkle this mixture evenly over the top of the batter.
  6. Carefully pour 1 cup of boiling water over the top of the batter and sprinkled sugar mixture. Do not stir.
  7. Bake for 30 to 35 minutes. The cake layer will look set, and the liquid underneath will turn into the rich pudding sauce.
  8. Remove from the oven and let it cool slightly before serving warm. This dessert is best served warm with ice cream.
