  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the crust: In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture firmly and evenly into the bottom of the prepared pan. Bake for 8 minutes. Let cool slightly.
  3. Prepare the cheesecake filling: In a large bowl, beat the softened cream cheese and 1 cup sugar with an electric mixer until smooth. Beat in the vanilla extract. Add the eggs one at a time, mixing just until combined after each addition. Do not overmix.
  4. Gently fold in 3/4 cup of the chocolate chips into the cheesecake batter.
  5. Pour the cheesecake batter over the cooled crust. Sprinkle the remaining 1/4 cup of chocolate chips evenly over the top of the batter.
  6. Bake for 30 to 35 minutes, or until the edges are set and the center has only a slight jiggle.
  7. Turn off the oven, prop the door open slightly, and let the cheesecake cool in the oven for 30 minutes. This helps prevent cracking.
  8. Remove the cheesecake from the oven and let it cool completely on a wire rack.
  9. Once cooled, cover the pan and chill in the refrigerator for at least 4 hours, or preferably overnight, for the best texture.
  10. Use the parchment paper overhang to lift the cheesecake out of the pan. Slice into bars and serve your rich, creamy dessert.

  • For an Oreo crust option, substitute 2 cups of finely crushed Oreo cookies (filling included) for the graham crackers and butter mixture.
