1 tablespoon olive oil
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup uncooked white rice
1/2 cup chopped yellow onion
2 cloves garlic, minced
1 (4 ounce) can diced green chilies, undrained
1 1/2 cups chicken broth
1/4 cup BBQ sauce
1–2 chipotle peppers in adobo sauce, minced (adjust to your spice preference)
1 tablespoon adobo sauce from the can
1/2 cup frozen corn
1/4 cup chopped fresh cilantro, for garnish
Lime wedges, for serving
Instructions
Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with chili powder, cumin, salt, and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
Add uncooked rice to the skillet and stir for 1 minute until lightly toasted. Add chopped onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Stir in diced green chilies, chicken broth, BBQ sauce, minced chipotle peppers, and adobo sauce. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
Return the browned chicken to the skillet. Stir everything together.
Cover the skillet, reduce heat to low, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
Stir in frozen corn and cook for an additional 5 minutes, uncovered, until corn is heated through.
Garnish with fresh cilantro and serve with lime wedges.
Notes
For a spicier dish, add more chipotle peppers or adobo sauce.
If you don’t have chicken thighs, you can use chicken breast, but adjust cooking time to prevent drying out.
