  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon soy sauce (for marinating chicken)
  • 1 teaspoon cornstarch (for marinating chicken)
  • 8 ounces dried egg noodles or chow mein noodles
  • 2 tablespoons vegetable oil, divided
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shredded cabbage
  • 1 cup sliced carrots
  • 1 cup broccoli florets
  • 1/2 cup sliced celery
  • 1/4 cup low-sodium chicken broth
  • 3 tablespoons soy sauce (for sauce)
  • 1 tablespoon oyster sauce (optional, for richer flavor)
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 2 green onions, sliced (for garnish)

Instructions

  1. Combine the chicken pieces with 1 tablespoon soy sauce and cornstarch. Set aside for 10 minutes.
  2. Cook the noodles according to package directions. Drain them well and set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. Add the remaining 1 tablespoon of oil to the skillet. Add the onion and cook for 1 minute until slightly softened.
  5. Add the garlic, cabbage, carrots, broccoli, and celery to the skillet. Stir fry for 3 to 4 minutes until the vegetables are crisp-tender.
  6. In a small bowl, whisk together the chicken broth, 3 tablespoons soy sauce, oyster sauce (if using), brown sugar, sesame oil, and ground ginger to create the sauce.
  7. Return the cooked chicken to the skillet with the vegetables. Add the cooked noodles.
  8. Pour the sauce mixture over the noodles, chicken, and vegetables. Toss everything together quickly until the noodles are evenly coated and the sauce has thickened slightly, about 1 to 2 minutes.
  9. Remove from heat. Garnish with sliced green onions before serving.

Notes

  • For best results when stir-frying, cook in batches if your skillet is small to prevent overcrowding and steaming the ingredients.
  • You can substitute chicken breast with boneless, skinless chicken thighs for a slightly richer flavor.
  • Use fresh ginger instead of ground ginger for a brighter taste in the sauce.
