A simple and flavorful marinade for tender, delicious carne asada, perfect for grilling.

Ingredients

  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, oregano, salt, black pepper, and cayenne pepper (if using).
  2. Place your desired cut of steak (skirt steak or flank steak work well) in a resealable bag or shallow dish.
  3. Pour the marinade over the steak, ensuring it is fully coated.
  4. Marinate in the refrigerator for at least 2 hours, or up to 8 hours for deeper flavor.
  5. Remove steak from marinade and grill to your desired doneness.

Notes

  • For a spicier marinade, add a minced jalapeño or serrano pepper.
  • This marinade is also great for chicken or pork.
  • Let the steak rest for 5-10 minutes after grilling before slicing.
