Ingredients
Scale
1/2 cup tahini
1/4 cup warm water
3 tablespoons fresh lemon juice
1 tablespoon maple syrup
1 clove garlic, minced
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the tahini, warm water, lemon juice, maple syrup, minced garlic, Dijon mustard, salt, and pepper into a small bowl.
Whisk the ingredients together until they are completely smooth and creamy.
If the dressing is too thick, add water, one teaspoon at a time, until you reach your desired consistency for your grain bowls.
Taste the dressing and adjust seasoning if needed, adding more lemon juice for tang or maple syrup for sweetness.
Use immediately over your Buddha bowl or store it in an airtight container in the refrigerator for up to one week.
Notes
For a tangier vinaigrette for grain bowls, increase the lemon juice by one tablespoon.
If you want an Asian inspired bowl sauce, add one teaspoon of low-sodium soy sauce or tamari for a gluten free option.
This recipe makes a great meal prep bowl dressing; double the batch for several days of lunches.
