Bite-size meatballs with smoky bourbon glaze, crispy bacon, and melted cheddar cheese, perfect for game day or any party.

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup bourbon
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 cup chopped cooked bacon
  • 1 cup shredded cheddar cheese
  • Chopped fresh parsley, for garnish
  • Toothpicks, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, salt, and pepper. Mix gently until just combined.
  3. Form the mixture into 1-inch meatballs and place them on a baking sheet.
  4. Bake for 15-20 minutes, or until browned and cooked through.
  5. While the meatballs bake, prepare the bourbon glaze. In a small saucepan, combine bourbon, ketchup, brown sugar, Worcestershire sauce, and smoked paprika.
  6. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for 5-7 minutes, until slightly thickened.
  7. Once the meatballs are cooked, drain any excess fat.
  8. Add the cooked meatballs to the saucepan with the bourbon glaze. Stir to coat evenly.
  9. Stir in the chopped cooked bacon and shredded cheddar cheese. Continue to cook for 2-3 minutes, until the cheese is melted and bubbly.
  10. Garnish with fresh parsley.
  11. Serve hot with toothpicks and your favorite dipping sauces.

Notes

  • For a slow cooker option, place cooked meatballs in a slow cooker on the ‘warm’ setting. Pour the prepared bourbon glaze over the meatballs, stir in bacon and cheese, and cook until cheese is melted.
  • You can also make these in a skillet. Brown the meatballs in a skillet, drain fat, then add the glaze, bacon, and cheese and cook until cheese is melted.
  • These meatballs can be made ahead and reheated.
