Make a better-than-takeout beef and broccoli stir fry in about 30 minutes. This recipe features tender beef, crisp broccoli, and a glossy garlic-ginger sauce.

  • 1 pound flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 head broccoli, cut into florets
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/4 cup water
  • 1 teaspoon cornstarch

Instructions

  1. In a medium bowl, toss the sliced beef with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Set aside.
  2. Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer and cook for 1-2 minutes per side, until browned. Remove beef from skillet and set aside.
  3. Add the broccoli florets to the skillet and stir-fry for 2-3 minutes, until bright green and tender-crisp. Add 1 tablespoon vegetable oil if needed.
  4. Add the minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together 1/4 cup soy sauce, oyster sauce, brown sugar, and sesame oil.
  6. In a separate small bowl, whisk together 1/4 cup water and 1 teaspoon cornstarch to create a slurry.
  7. Pour the soy sauce mixture into the skillet with the broccoli. Bring to a simmer.
  8. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens and becomes glossy.
  9. Return the browned beef to the skillet and toss to coat with the sauce. Cook for 1-2 minutes, until the beef is heated through.
  10. Serve immediately over rice.

Notes

  • For extra tender beef, you can marinate it in the soy sauce and cornstarch for at least 15 minutes before cooking.
  • If you don’t have oyster sauce, you can substitute with an additional tablespoon of soy sauce and a teaspoon of sugar.
  • Adjust the amount of garlic and ginger to your preference.
