Juicy chicken skewers coated in a sweet and spicy bang bang sauce, perfect for grilling, baking, or air frying. These easy skewers are a great party appetizer or weeknight meal.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1/2 tsp grated fresh ginger
  • Salt and black pepper to taste
  • Wooden or metal skewers, soaked if wooden

Instructions

  1. In a medium bowl, whisk together mayonnaise, sriracha, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Season with salt and pepper.
  2. Add the chicken pieces to the sauce and toss to coat evenly. Let marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
  3. Thread the marinated chicken onto the skewers, leaving a small space between pieces for even cooking.
  4. For Grilling: Preheat grill to medium-high heat. Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  5. For Oven: Preheat oven to 400°F (200°C). Place skewers on a baking sheet lined with parchment paper. Bake for 12-15 minutes, turning halfway through, until chicken is cooked through.
  6. For Air Fryer: Preheat air fryer to 380°F (190°C). Arrange skewers in a single layer in the air fryer basket. Cook for 10-12 minutes, flipping halfway through, until chicken is cooked through.
  7. Brush any remaining sauce over the skewers during the last few minutes of cooking for a glossy finish.
  8. Serve hot.

Notes

  • For a spicier sauce, add more sriracha.
  • Garnish with sesame seeds and chopped green onions before serving.
  • These skewers are excellent served with rice or a side salad.
