Enjoy the comforting flavors of banana bread in a quick, chewy cookie format. These one-bowl cookies are perfect for an easy treat.

  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Stir in the mashed ripe bananas.
  5. In a separate small bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. If using, fold in the chocolate chips or walnuts.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • For chewier cookies, slightly underbake them.
  • These cookies do not require chilling and can be baked immediately after mixing.
