  • 1 pound large shrimp, peeled and deveined
  • 4 ounces cream cheese, softened
  • 1 small jalapeño, seeded and minced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 810 slices thin-cut bacon, halved crosswise
  • 1 tablespoon brown sugar (optional, for glaze)
  • 1 teaspoon soy sauce (optional, for glaze)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with foil and place a wire rack on top.
  2. In a small bowl, mix the softened cream cheese, minced jalapeño, garlic powder, salt, and pepper until combined. This is your stuffing.
  3. Pat the peeled and deveined shrimp completely dry using paper towels. This step helps the bacon crisp up.
  4. Place a small spoonful of the cream cheese mixture onto the flat side of each shrimp.
  5. Wrap one half-slice of bacon around each stuffed shrimp, securing the stuffing inside. You can use a toothpick if needed, but try to wrap tightly so it holds its shape.
  6. Place the wrapped shrimp on the wire rack on the prepared baking sheet, ensuring the bacon seam side is down for the first part of cooking.
  7. If using a glaze, mix the brown sugar and soy sauce in a small bowl.
  8. Bake for 12-15 minutes, or until the bacon starts to become crisp.
  9. For extra crispiness, switch your oven to the broiler setting (watch carefully). Brush the tops of the shrimp with the glaze, if using. Broil for 1-3 minutes, watching constantly, until the bacon is fully crisp and slightly caramelized.
  10. Remove from the oven and let cool slightly before serving. Serve immediately as a hot appetizer.

Notes

  • For the crispiest bacon, use thin-cut bacon rather than thick-cut bacon.
  • If you prefer not to stuff the shrimp, you can skip the cream cheese mixture and simply wrap the plain shrimp with bacon and secure with a toothpick.
  • To make this a sweet and savory shrimp dish, increase the brown sugar in the glaze to 2 tablespoons and add 1/2 teaspoon of smoked paprika for a smoky bacon shrimp flavor.
