A quick and healthy treat that mimics the flavors of Samoas cookies, using apple slices, coconut, nut butter, and chocolate.

Ingredients

  • 4 medium apples, cored and sliced into 1/4-inch rings
  • 1 cup shredded unsweetened coconut
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup melted dark chocolate chips
  • Optional: 1 tablespoon maple syrup or honey for drizzling

Instructions

  1. Arrange apple rings on a plate or baking sheet.
  2. Spread a thin layer of almond butter or peanut butter onto each apple ring.
  3. Sprinkle shredded coconut over the nut butter, pressing gently to adhere.
  4. Drizzle melted dark chocolate over the coconut-covered apple rings.
  5. If desired, drizzle with maple syrup or honey.
  6. Chill for 5-10 minutes to set the chocolate before serving.

Notes

  • For a nut-free option, use sunflower seed butter.
  • You can toast the coconut before sprinkling for a deeper flavor.
  • These are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
