Make bakery-style apple fritter bites at home quickly. These small, fried bites feature fresh apples and cinnamon, finished with a simple vanilla glaze for a sweet, crunchy snack or dessert.

Ingredients

Scale
  • 2 large apples, peeled, cored, and finely diced
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar, plus 1/2 cup for coating
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Combine the diced apples with 1/4 cup of granulated sugar and 1/4 teaspoon of cinnamon in a small bowl. Set aside.
  2. In a medium bowl, whisk together the flour, baking powder, remaining 1/4 teaspoon of cinnamon, and salt.
  3. In a separate small bowl, whisk the egg, 1/2 cup milk, and 1 teaspoon vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
  5. Fold the sugared apples into the batter.
  6. Heat about 2 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C).
  7. Drop the batter by rounded tablespoons into the hot oil, being careful not to overcrowd the pot. Fry for 2 to 3 minutes per side, turning until golden brown and cooked through.
  8. Remove the fritter bites with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  9. While the fritter bites are still warm, roll them in the reserved 1/2 cup of granulated sugar.
  10. Prepare the glaze: Whisk together the powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth.
  11. Drizzle the vanilla glaze over the warm apple fritter bites. Serve immediately for the best texture.

Notes

  • For extra crispiness, make sure your oil temperature stays steady at 350°F.
  • You can substitute the glaze with a simple dusting of powdered sugar if you prefer less sweetness.
  • Use firm apples like Granny Smith or Honeycrisp for the best texture after frying.
