  • 1 cup rolled oats
  • 1/2 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup (1/2 stick) cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, 1/2 cup granulated sugar, 1/4 cup brown sugar, and vanilla extract until light and fluffy.
  3. In a separate bowl, whisk together the 2 1/2 cups flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a dough.
  4. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan to form the crust.
  5. In a medium bowl, combine the diced apples, 1/2 cup granulated sugar, lemon juice, 1 teaspoon cinnamon, and nutmeg. Toss to coat the apples evenly. Spread the apple mixture over the crust.
  6. In another bowl, combine the rolled oats, 1/2 cup brown sugar, 1/2 cup flour, and 1/2 teaspoon cinnamon for the topping.
  7. Cut in the cold butter pieces using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Sprinkle the oat topping evenly over the apple layer.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the apple filling is bubbly.
  9. Let the bars cool completely in the pan on a wire rack before cutting into squares.
