You need a new fall dessert. These moist apple brownies offer a chewy twist on traditional apple pie, featuring tart apple chunks, warm cinnamon, and crunchy pecans, finished with a simple maple glaze. They are easy to make and perfect for potlucks.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 medium tart apples (like Granny Smith), peeled, cored, and diced small
  • 1/2 cup chopped pecans, toasted
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons pure maple syrup (for glaze)
  • 1 teaspoon milk or water (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate medium bowl, whisk together the flour, cinnamon, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. Gently fold in the diced apples and toasted pecans into the batter.
  5. Spread the batter evenly into the prepared baking pan.
  6. Bake for 28 to 32 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached. The edges should look set.
  7. Let the brownies cool completely in the pan on a wire rack.
  8. While cooling, prepare the glaze: Whisk together the powdered sugar, maple syrup, and milk or water until smooth. Add more liquid, a drop at a time, if the glaze is too thick.
  9. Once cooled, drizzle the maple glaze evenly over the top of the apple brownies. Let the glaze set before cutting into squares.

Notes

  • For the chewiest texture, use tart apples like Granny Smith or Honeycrisp.
  • Toast your pecans briefly in a dry skillet over medium heat for enhanced flavor before adding them to the batter.
  • If you prefer a richer flavor, substitute 1/4 cup of the all-purpose flour with almond flour.
  • These apple brownies are excellent served slightly warm with vanilla ice cream.
