Make perfectly crispy air fryer french fries with a fluffy interior using minimal oil. This easy recipe includes techniques for maximum crunch, whether you start with fresh potatoes or frozen ones.

  • 2 large Russet potatoes (for scratch fries)
  • 1 tablespoon olive oil or avocado oil
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • Optional Seasoning: 1 teaspoon garlic powder, 1 tablespoon grated Parmesan cheese
  • For Frozen Fries: 1 lb frozen french fries

Instructions

  1. Prepare Potatoes (Scratch Method): Peel the potatoes if desired, then cut them into uniform 1/4-inch thick sticks. Place the cut potatoes in a large bowl and cover completely with cold water. Soak for at least 30 minutes, or up to 2 hours, to remove excess starch.
  2. Dry Thoroughly: Drain the potatoes completely. Lay them out on a clean kitchen towel or several layers of paper towels. Pat them completely dry. Moisture prevents crisping.
  3. Season: Place the dry potatoes in a clean bowl. Drizzle with 1 tablespoon of oil and toss to coat lightly. Sprinkle with salt and pepper. If using, add garlic powder or Parmesan cheese now.
  4. Preheat Air Fryer: Preheat your air fryer to 380°F (195°C) for 5 minutes.
  5. Cook (Scratch Fries): Place the seasoned potatoes in the air fryer basket in a single layer, working in batches if necessary. Do not overcrowd the basket. Cook for 15 to 20 minutes, shaking the basket vigorously every 5 to 7 minutes to promote even browning and crisping.
  6. Cook (Frozen Fries Hack): If using frozen fries, skip the soaking and drying steps. Place frozen fries in the basket without overcrowding. Cook at 400°F (200°C) for 10 to 14 minutes, shaking halfway through, until golden brown and crisp.
  7. Check for Doneness: The fries are done when they are golden brown and crispy on the outside. If they are not crisp enough, increase the temperature to 400°F (200°C) and cook for an additional 2 to 3 minutes.
  8. Serve Immediately: Remove the fries and transfer them to a serving bowl. Taste and add more salt if needed. Serve right away for the best texture.
